Sweet Chicken Bacon Wraps/Garlic Roasted Potatoes/Corn on the cob



I have recently discovered that on Sunday's I have TONS of time to myself. So why not just take the time to plan out an awesome dinner meal for my husband to come home to after he is done with work? I ended up finding two awesome recipe's from the food network by Paula Dean and Ina Garten that I already had all the ingredients to. 

Sweet Chicken Bacon Wraps 
Just so you know, it takes an hour all together for this dish. About 25 minutes to prep and about 35 minutes to cook. With this amount of ingredients, it can yield 12-15 servings.
This recipe is great for beginner's! The taste of this recipe is amazing since it has a sweet and spicy taste. You mainly taste the brown sugar. 









Ingredients

  • boneless, skinless, chicken breasts (about 4 breasts)
  • 1 (1-pound) package sliced bacon
  • 2/3 cup firmly packed brown sugar
  • 2 tablespoons chili powder 
  • 25 toothpicks
  • Cutting board
  • Food Thermometer Reader (Great for Beginner's)
Directions:
First and foremost, I recommend washing your counter tops before you start.  Then you need to wash your hands.  Most food poisoning occurs at home than in a restaurant. Then you will need to Preheat your oven to 350 degrees F.   On your cutting board, Cut chicken breasts into 1-inch cubes. After your done doing that, cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a tooth pick. Stir together brown sugar and chili powder.  Completely cover wrapped chicken in mixture. Coat a pan with  nonstick cooking spray. Place chicken wrap on the coated pan. Bake at 350 for 35 minutes or until bacon is crisp and chicken is fully cooked.


 If you have purchased a food thermometer reader, you will need to stick the thermometer into the thickest part of the chicken. If it is reading over 165 degrees, the chicken is done. 


PLEASE READ:
   Now that your sweet chicken is baking, you will need to COMPLETELY clean your counter tops and tools you have used, including your cutting board to prevent cross contamination. (Just throw them into the dishwasher). After this is done and your counter tops are cleaned, you can go ahead and move onto prepping the potatoes once the sweet chicken has only 15 minute left. Once the chicken is done just change the temp on the oven and pop in the potatoes.




Garlic Roasted Potatoes:


The amount of time for this recipe is an hour and 10 minutes. 10 minutes to prep, and 50 minutes to cook ;-) Its a very simple recipe. However, the garlic taste is somewhat strong, so don't chop up to much garlic!
 




 

Ingredients

  • 3 pounds small red or white potatoes
  • 1/4 cup good olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons minced garlic (6 cloves)
  • 2 tablespoons minced fresh parsley

Directions

You will need to preheat your oven to 400 degrees F.  You will then need to cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic (Do a couple of slices at a time). Toss until the potatoes are well coated. Transfer the potatoes to a pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning. Remove the potatoes from the oven, toss with some fresh parsley season to taste, and serve hot.




For the corn on the cob, you will just need to bring your pot to a boil and then boil the corn for about 10 minutes. Then butter and salt as you desire.
