Lasanga ;-)










Cod Fish Fillet with Corn on the Cob and some Rice!




With the Cod Fillets, put them in a pan. Drizzle it with Lemon Juice, table spoon of butter over the fish and rest of the pan. Top it off with a little bit of Mrs Dash, and bake at 375 degrees for 20-30 minutes.
 When it is done, drizzle a little more lemon juice on top of the cod. 
With the corn, just boil for 10 mins
For the rice, just buy  a box of minute rice :) You can add pepper and salt to the rice too!

Rainbow Pancakes, Bacon, Eggs, and a random angel fruit cake desert!


Now who doesn't like simple and just plan fun ideas when having breakfast for dinner?!


Things you will need!

    Bag of any sort of Pancake Mix
     4 Eggs
    1 package of bacon
    1 container of Strawberries and blueberries
    One package of chocolate chips
    Angel bread
    Whip Cream
    Food coloring!














Pancakes are very simple to make! Follow the directions according to the pancake box/ bag.  With each batter, mix the food color you desire!

Yellow + red = orange.
Red + blue = purple.
Blue + yellow = green.
Red+green= brown.
Green+yellow= light green.
Blue+green= blue-green
Red+white= pink.
Black+white= gray.

Once your batter in the pan begins to bubble, flip it!

Once the pancakes are done, decorate them with chocolate chips, strawberries, or blue berries!

Then begin to cook your bacon. Cook until crip or until desired crispyness!

Crack eggs into a pan, scramble them and cook until fluffy!

With the angel bread, just take the strawberry, blue berry, and whip cream and decorate the angel bread any way you want!

Enchiladas! ;-)


Now who wouldn't want some homemade chicken enchiladas!? This was a surprised dinner for my husband. He was so pleased with how it turned out. My husband just loves Mexican food! He served a mission in Mexico City, Mexico; so I must say I was quite nervous making him Mexican food! I was so nervous that it wouldn't meet his expectations, but I succeeded!

CHICKEN ENCHILADAS!
    3 table spoons of canola oil
     Salt
    12 tortillas to deep fry
    2 cups of cooked chicken
    2 cups of any type of canned chicken if short on time (or just cook some yourself at home at 350 degrees for 45 minutes.  Remember to flour your chicken and chop up into desired pieces and if unfamiliar with knowing how to tell your chicken is done, take a temperature thermometer and stick it in the thickest part of the chicken and if it reads 165 degrees or higher, your chicken is done).
    2 cups of Monterey jack cheese (Buy a bigger bag of cheese so you can decorate the top of the enchiladas before putting them in the oven)
    1/2 cup of sour cream
   1 small white onion, thinly sliced and separated into rings
    6 radishes thinly sliced into rings
    1  Huge can of Enchilada Sauce


   1) Preheat your oven to 325 Degrees. In a frying pan over medium heat, warm  the Enchilada Sauce. After it is heated up, spread a cup and a half over the bottom of the pan.
   
  2) In another frying pan over medium heat, warm 3 tablespoons of oil until hot. Using tongs, quickly drag the tortillas one at a time through the oil to soften them on both sides. Drain on a paper towel lined plate. Pat the tortillas dry with paper towels.

  3) In a bowl, mix together the shredded chicken and cheese. Working with one tortilla at a time, spread a spoonful of the chicken cheese mixture near the edge of the tortilla, roll it up and place it seam side down in the prepared baking dish. Repeat the with the remaining tortilllas and chicken cheese mixture, arragnging the rolled tortillas side by side in the dish. Spoon the remining sauce over the tortillas. Bake the enchiladas until they are heated through and the cheese on top is melted, about 15 minutes.

4) To serve, top the enchiladas in the pan with the sour cream, onion slices, and radish slices. Serve at once ;-)

Sweet Chicken Bacon Wraps/Garlic Roasted Potatoes/Corn on the cob



I have recently discovered that on Sunday's I have TONS of time to myself. So why not just take the time to plan out an awesome dinner meal for my husband to come home to after he is done with work? I ended up finding two awesome recipe's from the food network by Paula Dean and Ina Garten that I already had all the ingredients to. 

Sweet Chicken Bacon Wraps 
Just so you know, it takes an hour all together for this dish. About 25 minutes to prep and about 35 minutes to cook. With this amount of ingredients, it can yield 12-15 servings.
This recipe is great for beginner's! The taste of this recipe is amazing since it has a sweet and spicy taste. You mainly taste the brown sugar. 









Ingredients

  • boneless, skinless, chicken breasts (about 4 breasts)
  • 1 (1-pound) package sliced bacon
  • 2/3 cup firmly packed brown sugar
  • 2 tablespoons chili powder 
  • 25 toothpicks
  • Cutting board
  • Food Thermometer Reader (Great for Beginner's)
Directions:
First and foremost, I recommend washing your counter tops before you start.  Then you need to wash your hands.  Most food poisoning occurs at home than in a restaurant. Then you will need to Preheat your oven to 350 degrees F.   On your cutting board, Cut chicken breasts into 1-inch cubes. After your done doing that, cut each bacon slice into thirds. Wrap each chicken cube with bacon and secure with a tooth pick. Stir together brown sugar and chili powder.  Completely cover wrapped chicken in mixture. Coat a pan with  nonstick cooking spray. Place chicken wrap on the coated pan. Bake at 350 for 35 minutes or until bacon is crisp and chicken is fully cooked.


 If you have purchased a food thermometer reader, you will need to stick the thermometer into the thickest part of the chicken. If it is reading over 165 degrees, the chicken is done. 


PLEASE READ:
   Now that your sweet chicken is baking, you will need to COMPLETELY clean your counter tops and tools you have used, including your cutting board to prevent cross contamination. (Just throw them into the dishwasher). After this is done and your counter tops are cleaned, you can go ahead and move onto prepping the potatoes once the sweet chicken has only 15 minute left. Once the chicken is done just change the temp on the oven and pop in the potatoes.




Garlic Roasted Potatoes:


The amount of time for this recipe is an hour and 10 minutes. 10 minutes to prep, and 50 minutes to cook ;-) Its a very simple recipe. However, the garlic taste is somewhat strong, so don't chop up to much garlic!
 




 

Ingredients

  • 3 pounds small red or white potatoes
  • 1/4 cup good olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons minced garlic (6 cloves)
  • 2 tablespoons minced fresh parsley

Directions

You will need to preheat your oven to 400 degrees F.  You will then need to cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic (Do a couple of slices at a time). Toss until the potatoes are well coated. Transfer the potatoes to a pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning. Remove the potatoes from the oven, toss with some fresh parsley season to taste, and serve hot.




For the corn on the cob, you will just need to bring your pot to a boil and then boil the corn for about 10 minutes. Then butter and salt as you desire.
